JAM MUFFINS: Sweet Secrets in Every Bite

JAM MUFFINS: Sweet Secrets in Every Bite

Jam muffins are a delightful treat that perfectly blends the sweetness of jam with the light, fluffy texture of a traditional muffin. The addition of buttermilk enhances the flavor and contributes to their tender crumb. Buttermilk brings a tangy richness that complements the sweetness of the jam, creating a harmonious balance of flavors. Its acidity reacts with the leavening agents, resulting in a soft, moist texture that practically melts in your mouth. With every bite, you're greeted with bursts of fruity jam goodness and the comforting warmth of a perfectly baked muffin, making them an irresistible delight for any occasion.

Jam Muffins

 2/3 cups (250g) all-purpose flour

1 tbsp baking powder

1/2 tsp baking soda

½ teaspoon salt

2 tbsp granulated sugar

2 tbsp brown sugar

60g unsalted butter, melted, cooled

1 tbsp grated orange zest

1 cup (250ml) buttermilk

1 egg, lightly beaten

1/2 cup jam

Confectioners’ sugar, to dust

Preheat the oven to 400°F. Line 12 cups in a muffin pan with liners or spray cups with non-stick cooking spray.

Sift flour, baking powder, baking soda, salt, granulated sugar, brown sugar, and ½ teaspoon salt into a large bowl. In a separate bowl, combine the melted butter, orange zest, buttermilk, and egg.

Add egg mixture to dry ingredients, then fold together until just combined. Spoon 2 tablespoons batter into the base of each muffin pan. Add 2 teaspoons of fig jam to each, then top with the remaining batter. Top each muffin with a fruit or streusel.

Bake the muffins for 18-20 minutes until light golden brown and a skewer inserted in the center comes out clean. Dust with confectioners’ sugar and serve.
