Monster Cookies with Googly Eyes

Don’t be scared…I’m delicious!

These fun and festive peanut butter oatmeal cookies are the perfect treat to celebrate the season! Made with a base of creamy peanut butter, brown sugar, and old-fashioned oats, these cookies combine a chewy texture with bursts of sweetness from M&M's and any mix-ins you choose, like chocolate chips or candy corn. The dough is easy to make, and after baking, the candy "googly" eyes pressed onto the warm cookies add a playful touch. You can even freeze the dough for later baking, making these a versatile option for busy days. Perfect for parties, these cookies bring smiles to any occasion!


Monster Cookie Recipe

Ingredients

¼ cup unsalted butter, room temperature (½  of a stick)

1 cup brown (light or dark) sugar

1 large egg at room temperature

1 cup creamy peanut butter

1 teaspoon pure vanilla extract

2 cups old-fashioned oats

½ cup all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

½ cup M&M's candies (seasonal colors)

¼ cup mix-ins

Add Candy “Googly” eyes – after baking

Method

1. Preheat your oven to 350°F and line a baking sheet with parchment paper. Set it aside.

2. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and brown sugar together until light and fluffy.

3. Mix in the egg, peanut butter, and vanilla extract until well combined.

4. Gradually add the oats, flour, baking soda, and salt and mix until everything is combined again.

5. Gently fold in the M&M's and your “mix-in” into the cookie dough.

6. Use a cookie scoop to portion the dough into cookies of your desired size. Place the cookies on the prepared baking sheet, spacing them at least 2 inches apart, depending on the size of the dough balls you’ve made.

Bake the cookies for 15 minutes or just until the edges are set. Remove them from the pan and allow them to cool to room temperature. Press the candy eyes on the cookies while they’re still warm.

NOTE: This dough can be portioned and frozen before baking. If you bake them before freezing, the googly eyes won’t stick.

MIX-INS: candy corn, chocolate chips, mini chips, peanut butter chips, toffee bits, etc.
